GRANDMA GEITEL’S MANDEL BREAD

2 CUPS SUGAR, DIVIDED
3 LARGE EGGS
1 CUP VEGETABLE OIL
3 ¾ CUPS ALL PURPOSE FLOUR
2 TEASPOONS BAKING POWDER
½ TEASPOON SALT
1 TEASPOON VANILLA EXTRACT
1 (6 OUNCE) PACKAGE SEMISWEET MINI MORSELS
1 ½ TEASPOONS GROUND CINNAMON

BEAT 1 ½ CUPS SUGAR AND EGGS AT MEDIUM SPEED.
ADD OIL AND THE NEXT FOUR INGREDIENTS; BEAT UNTIL
BLENDED. STIR IN SEMI SWEET MORSELS MORSELS.

DIVIDE DOUGH IN HALF; SHAPE EACH PORTION INTO A 10X3 INCH LOG
ON LIGHTLY GREASES BAKING SHEETS (DOUGH WILL BE STICKY). SHAPE
DOUGH WITH FLOURED HANDS, IF NECESSARY.

BAKE AT 350 DEGREES FOR 25 TO 30 MINUTES UNTIL LIGHTLY BROWNED.
COOL SLIGHTLY; CUT DIAGONLLY INTO ¾ INCH THICK SLICES.

COMBINE REMAINING ½ CUP SUGAR AND CINNAMON; SPRINKLE OVER
SLICES.
BAKE 5 MINUTES MORE AND COOL COMPLETELY ON WIRE RACKS.

GRANDMA’S CINNAMON-APPLE CAKE

  • 1 ¾ CUPS SUGAR, DIVIDED
  • ½ CUP STICK MARGARINE, SOFTENEND
  • 1 TEASPOON VANILLA EXTRACT
  • 6 COUNCE BLOCK STYLE FAT FREE CREAM
  • CHEESE, SOFTENED (about ¾ cups)
  • 2 LARGE EGGS
  • 1 ½ CUPS ALL PURPOSE FLOUR
  • 1 ½ TEASPOONS BAKING POWDER
  • ½ TEASPOON SALT
  • 2 TEASPOON GROUND CINNAMON
  • 3 CUPS Rome Apples (about 2 Large)
  • COOKING SPRAY

BEAT 1 ½ CUPS SUGAR, MARGARINE, VANILLA AND CREAM CHEESE AT
MEDIUM SPEED UNTIL WELL BLENDED. ADD EGGS, 1 AT A TIME, BEATING
WELL AFTER EACH ADDITION. COMBINE FLOUR, BAKING POWDER, AND
SALT. ADD FLOUR MIXTURE TO CREAMED MIXTURE, BEATING AT LOW
SPEED UNTIL BLENDED.

COMBINE 1/4 CUP SUGAR AND CINAMMON. COMBINE 2 TABLESPOONS
CINNAMON MIXTURE AND APPLE IN A BOWL, AND STIR APPLE MIXTURE
INTO BATTER. POUR BATTER INTO AN 8-INCH SPRINGFOARM PAN COATED
WITH COOKING SPRAY, AND SPRINKLE WITH REMAINING CINNAMON
MIXTURE.

BAKE AT 350 DEGREES FOR 1 HOUR AND 15 MINUTES OR UNTL THE CAKE
PULLS AWAY FROM THE SIDES OF THE PAN. COOL THE CAKE COMPLETELY
ON A WIRE RACK, AND CUT USING A SERRATED KNIFE.

DISCO STEW

  • 2 TEASPOONS SALT
  • ½ TSP. PEPPER
  • ½ TEASPOON GARLIC POWDER
  • 4 POUNDS CHUCK OR BRISKET
  • 2 TABLESPOONS FAT
  • 3 ONIONS, SLICED
  • 1 ½ CUPS BOILING WATER
  • 3 TOMATES DICED
  • 3 CARROTS QUARTERED
  • 2 GREEN PEPPERS
  • 4 POTATOES

SPRINKLE THE SALT, PEPPER AND GARLIC POWDER ON THE MEAT.
HEAT THE MEATON OIL OR FAT. ADD THE ONIONS AND CONTINUE TO
BROWN.
ADD THE WATER AND THE TOMATOES. COVER AND COOK OVER LOW
HEAT. ABOUT 2 ½ HOURS. ADD THE CARROTS, GREEN PEPPERS AND
POTATOES.

COOK 30 MINUTES MORE.

GRANDMA’S COOKIES (SNOOKER DOODLES)

  • 4 CUPS SIFTED FLOUR
  • 3 EGGS BEATEN
  • 2 TEASPOONS BAKING POWDER
  • 2 CUPS WHITE SUGAR
  • 1 TSP. VANILLA
  • ORANGE (SQUEEZED OUT)
  • ORANGE RIND (GRATED)
  • CINAMMON
  • ¾ CUP OIL

TAKE FLOUR; PUT BAKING POWDER INTO FLOUR.
MAKE A HOLE IN FLOUR.
MIX EGGS WITH SUGAR AND PUT INTO FLOUR.
MIX ALL INGREDIENTS TOGETHER…
KNEAD DOUGH.
ROLL ONTO BOARD AND USE RIM OF GLASS TO MAKE SHAPES.
ADD CINAMMON ON TOP OF COOKIES.
PLACE ONTO A GREASED TRAY.

BAKE AT 325 DEGREES FOR ¾ OF AN HOUR.

BAKED MACARONI AND CHEESE

  • ½ LB. ELBOW MACARONI (2 CUPS)
  • 1 CUP GRATED CHEESE SHARP CHEESE (CHEDDAR)
  • 3 TABLESPOON BUTTER
  • 3 TABLESPOON FLOUR
  • ½ TEASPOON SALT
  • 1/8 TEASPOON PEPPER
  • 2 CUPS WHOLE MILK
  • BUTTER BREAD CRUMBS
  • (1 ½ CUPS)

COOK MACARONI AS DIRECTED. DRAIN WELL,  MELT BUTTER IN A DOUBLE BOILER, STIR IN FLOUR, PEPPER AND SALT. ADD MILK GRADUALLY AND CONTINUE COOKING UNTIL THICKENED. ADD CHEESE AND CONTINUE TO COOK UNTIL CHEESE IS MELTED.
COMBINE SAUCE WITH DRAINED MACARONI AND POUR INTO A GREASED CASSAROLE DISH.
MIX THE BREAD CRUMBS WITH BUTTER UNTIL THEY ARE OF A NICE PASTE CONSISTENCY.
THEN TOP THE MACARONI WITH THE BUTTERED BREAD CRUMBS.
BAKE IN A MODERATELY HOT OVEN; AROUND 350 DEGREES FOR ABOUT 20 MINUTES.
